1 x 440g tin Borlotti or Cannellini beans

2 tablespoon chopped parsley

1 teaspoon chopped peeled garlic

1/2 chilli - deseeded and chopped

3 tablespoon Lemon juice

2 tablespoon Extra virgin olive oil

1 teaspoon salt

Freshly ground black pepper

For the Bruschetta:

6 - 8slices Sour dough bread

Extra virgin olive oil

4clovesPeeled garlic


Chopping board; knife; Potato masher; Mixing bowl; Juicer


Step 1
Prepare the parsley, garlic, chilli and lemon juice

Step 2
Drain the beans through a strainer - reserving the bean water
Rinse the beans well
Place the beans on a board and chop roughly with a knife
Mash them coarsely with a vegetable masher
Place the mashed beans into a large mixing bowl

Step 3
Add the garlic, chilli and parsley to the beans
Add lemon juice to taste
Add extra virgin olive oil
Loosen the mixture with a few tablespoons of the reserved bean water to achieve the desired consistency
Season well with salt and pepper

Step 4
Make the bruschetta
Cook the slices of bread on both sides until golden
While the bread is warm - rub one side with a clove of garlic
Moisten with a little extra virgin olive oil
Top with the bean puree

Step 5
Arrange on a serving plate and serve immediately
