Master the Art of Home Cooking
Overview
There are three intermediate courses. Each runs weekly over four consecutive weeks.
Class size is small, limited to 4 - 6 participants - ideal for learning.
If you are already a reasonably confident cook and know your way around your kitchen but want to be inspired, improve your skills and expand your cooking repertoire t to the next level, these are the courses for you.
The courses are fun, interactive weekly group classes specifically designed to advance your skills, gastronomic knowledge, creativity and repertoire of Mediterranean cookery.
Intermediate Course 1 - 'Mediterranean Masterclass'
Dive deeper into four key elements of the Mediterranean food pyramid:
Week 1: Leaves, Weeds, Herbs and Dressings
Week 2: Colourful Vegetables - Pickled, Cooked and Raw
Week 3. Pulses. Grains, Nuts and Seeds
Week 4. Fish and Seafood
Intermediate Course 2 - 'Salt, Fat, Acid, Heat'
Salt Fat Acid and Heat are the four fundamentals of good cooking: We teach you the theory and application of each of them so that you can become a more creative cook who enjoys predictable outcomes in the kitchen.
This course has been inspired by Samin Nosrat's book and Netflix series of the same name. Come prepared - read the book and watch the series!
Intermediate Course 3 - 'Italian Cooking'
- A Regional Journey Through Italy -
There is no single ‘Italian’ cuisine. Italy remains intensely regional, with ingredients, dishes and food traditions deeply connected to place. Every region has its own identity, and every town, village and family has its own way of cooking.
This course looks beyond familiar favourites to explore the dishes Italians are most attached to: simple, seasonal food prepared with restraint and served with generosity and pleasure.
Together we will discover the rich diversity of Italy’s regional cuisines and the enduring traditions that continue to shape the way Italians cook, eat and gather around the table.
